2 Day Sourdough Masterclass @ Seasons Artisan School

Making perfect Sourdough takes time and this two day course gives you the chance to learn how and why this is, working alongside an award winning Sourdough master.

From understanding the history, development and ingredients that are vital to the creation of genuine Sourdough, creating a starter, mixing, kneading and rolling your dough, cold fermentation and proving right through to the perfect slash and bake of your loaf this course walks you step by step through the whole process.

You will have the opportunity to bake Britain’s Best Loaf from 2017 – a delicious Beetroot Sourdough which is still winning awards today. You will also explore other flavours and recipes for loaves perhaps coming up with the next ‘big thing’

Sourdough is not just about loaves though and this course will also give you chance to see the breadth of uses and opportunities with Sourdough.

Whilst we provide a delicious buffet lunch on day one, on day two you will be the chef, making a tasty Sourdough pizza.

You will leave on day two with your perfectly baked loaves and all the knowledge needed to bake your very own sourdough at home.

One Day Sourdough Workshop @ Seasons Artisan School

Sourdough is both beautifully simple and incredibly versatile and this one day course shows learners how to create, then transform the dough into a variety of products.

Working with a Sourdough master you will cover everything from the history and development through to the making and baking.

You’ll create your own starter, before making lunch – a delicious sourdough pizza.

Finally you’ll learn how to flavour the dough and shape and create wonderful loaves yourself.

2 Day Advanced Artisan Bread-making @ Seasons Artisan School

Suitable for all levels but understanding of bread making is preferable.

Baking beautiful bread takes time, patience and an understanding of combining ingredients in perfect harmony.

This advanced two day course takes learners though a range of Artisan breads showing how levels of yeast and fermentation processes play key roles in producing the different flavours and textures.

The course will explore Levain and Poolish preferments, overnight and bulk fermentation processes as well as a variety of grains and flours including Rye.

Over the two days loaves made will include French baguettes, bloomers and a French Country loaf, Foccacia and a Rye Loaf.

  • Levels of yeast needed for a variety of artisan breads
  • Range of pre-ferments and fermentation processes
  • 5 different loaves made
  • History of Artisan breads

Created for aspiring and passionate home bakers all our courses are designed to enable you to learn tips and techniques you can use at home. All our methods require only basic equipment, all our recipes can be baked in conventional household ovens and all the ingredients are readily available in local stores.

Want to give Paul Hollywood a run for his money? After this one day course packed with activities giving you the chance to make four different types of bread you’ll be top of the class in the bread baking stakes. Exact time to be notified on booking.

Starting with the British classic white loaf to the more ambitious multiseed bloomer, we then leap over to the continent, popping into Paris for a beautiful baguette before finishing in Florence with a flavoursome focaccia.

From mixing and kneading to proving and baking you will learn all the tips and techniques for each of these styles.
